What is  

ChocoShell was born in the laboratories of the Department of Agricultural, Forestry and Food Sciences and is owned by the University of Turin.

Patented ready-made base for Chocolate Ice Cream, suitable for industrial, artisanal and home use, including ground roasted cocoa bean peel and in addition to the richness in fiber it provides, it allows to increase the nutritional value of the final product.

At the moment there is no ready-made base of this type on the market and the demand for ice creams with a reduced fat content but with a structure similar to that of traditional ice cream is getting stronger.
This preparation normally consists of a mixture of powdered ingredients in which cocoa and sugar are present, and possibly thickeners and flavors, in variable percentages.
To this ready powdered base the consumer / user must add cow's milk or vegetable milk, and eventually sugar and / or cream in order to obtain the desired final product

Why it is so Innovative

Thanks to the powder obtained from the grinding of cocoa bean peel, thanks to its presence in fibers, it allows to reduce, in ice cream, the fat content of the finished product with consequent reduction of caloric power, while maintaining its softness; as the structuring and softening activity of the fatty substances is carried out by the fibers of the peel, with a significant reduction in the final energy value of the ice cream and enriched with fibers, with obvious positive nutritional effects for the consumer. At the same time, again in ice cream, the presence of fibers increases the resistance to melting, which is a qualitative factor of great interest in the artisan product.

The kit for the preparation and storage of Homemade chocolate ice cream includes:

• Ready-made base for chocolate ice cream
• Food tray in compostable material

The ready base is suitable to be marketed for home production and in this case the ready base is placed in a predefined quantity in a bag, contained in turn in a tray of compostable material suitable for containing the ice cream; In this way, the consumer will only have to add the milk of the preferred type (whole, skimmed, semi-skimmed, vegetable, etc.), produce the ice cream and use the tray for storage in the freezer.
